Spiced Healthy Zucchini Bread Recipe

Zucchini bread is a healthy alternative to cake and the following recipe shows you how to make the best recipe for zucchini bread. It might surprise you to learn that a crockpot is the cooking method of choice for zucchini bread and that is because the bread stays so moist and delicious when you cook it slowly. You will need a coffee can or something similar to put the batter inside and, whichever container you choose, it has to fit inside the crockpot.

It is important to use a smaller container inside the crockpot, else the batter will stick to the inside of the slow cooker and scorch on the bottom. When you bake something in the oven, the heat circulates all around it and the result is even but, in a crockpot, the heat rises up from the bottom so you need to put the batter in another container in order to get it cooked evenly. You can use any kind of coffee can, glass or Pyrex dish or another kind of cleaned metal container.

The following recipe features vanilla extract, nutmeg and cinnamon to give the zucchini bread an aromatic flavor and it also features chopped nuts and you can use walnuts or pecans or even a mixture of the two. The sugar adds a nice sweetness to the zucchini bread and the other ingredients give it a good texture.

Recipe for Zucchini Nut Bread with Spices

Ingredients -

2 cups all-purpose flour
2 eggs
½ teaspoon baking powder
1 tablespoon vanilla extract
1 cup chopped walnuts or pecans
1 ½ teaspoons ground cinnamon
1 ⅓ cups peeled, grated zucchini
¼ teaspoon ground nutmeg
⅔ cup vegetable oil
¼ teaspoon salt
1 ¼ cups white sugar

Preparation:

Beat the eggs until they are foamy and light, using an electric mixer.

Add the sugar, zucchini, vanilla, and oil and mix well.

Stir the nuts with the dry ingredients and blend this into the zucchini mixture.

Pour the batter into a 2 quart mold or a 2 lbs coffee can.

Put the mold or can inside the crockpot.

Cover the mold or can with 8 paper towels.

Cover the slow cooker and bake for 3 or 4 hours on high.

Do not remove the lid until the bread has been cooking for 3 hours.

Let the zucchini bread stand for 5 minutes, then unmold it and serve it warm in slices.
