Spiced Pumpkin Bread Recipe Canned Pumpkin

This delicious recipe produces the most wonderful pumpkin bread you have ever tasted. If warm, moist, flavorful pumpkin bread is your idea of heaven, you are really going to enjoy this. Use canned pumpkin to make things easier or use fresh pumpkin and prepare it yourself. To be honest, the results are practically the same whichever you use so you might as well use canned pumpkin puree. You can use light brown sugar or dark brown sugar. Again, the results will be very similar.

You will need to cook the pumpkin bread inside a container in the crockpot, rather than just in the crockpot itself. This is so the heat can circulate around it and so it does not stick to the crockpot. If you just pour the batter directly into the crockpot, it will scorch on the bottom and cook too fast underneath, so it is important to use a coffee can or similar can or dish which fits inside your crockpot. That might mean doubling or halving the recipe, depending on the size of your crockpot and the size of the containers you have available to use.

This recipe contains cinnamon and nutmeg, which are spices that go beautifully with pumpkin. These spices feature in many pumpkin soup recipes. The chopped nuts can be pecans or walnuts and these add a contrasting texture to the otherwise light and fluffy bread and they also add some crunch. This is a very simple recipe because you just need to combine the ingredients in the right order and cook it. The pumpkin bread is ready after about three hours, when it is set and when a wooden skewer inserted into the middle comes out clean.

Pumpkin Bread with Spices and Nuts

Ingredients -

½ teaspoon cinnamon
½ teaspoon salt
1 cup chopped walnuts or pecans
1 teaspoon baking soda
½ teaspoon nutmeg
1 ½ cups sifted flour
2 beaten eggs
1 cup canned pumpkin puree
½ cup white sugar
½ cup brown sugar
½ cup vegetable oil

Preparation:

Combine the sugars in a mixing bowl with the vegetable oil.

Stir in the pumpkin puree and eggs.

Sift the dry ingredients together and stir them into the pumpkin mixture.

Stir in the nuts. Pour this batter into a greased, floured 2 lbs coffee can or use a baking dish instead.

Put the can or dish inside the crockpot and cover it with 8 paper towels.

Put the lid on the crockpot and cook for about 3 hours on high.

Do not lift the lid for the first 2 hours of cooking time.

Let the pumpkin bread cool a little, and then serve it in slices.
