Ingredients -
2 cups all-purpose flour
2 eggs
1 cup white sugar
1 teaspoon salt
1 teaspoon baking soda
½ cup softened butter
½ cup lightly toasted, chopped pecans
1 teaspoon vanilla extract
2 tablespoons plus 2 teaspoons milk
4 mashed bananas
Preparation:
Preheat the crockpot to high.
Grease and flour a 2 lbs metal container or the crockpot insert.
Combine the baking soda with the salt and flour in a bowl, and then add the nuts. Cream the sugar and butter in another bowl. Add the eggs, one at a time, then add the vanilla extract and milk, and mix well. Stir in the bananas, and then gradually add the flour mixture, stirring until just combined. Put the insert into the crockpot and pour the batter in.
If you are using a metal container, you will need to set it on top of a rack or aluminum foil balls in the crockpot and top the container with some paper towels.
Cook for 2 or 3 hours on high or until the banana bread is done.
If you are using a metal container, leave the lid slightly loose.
If you are using the crockpot insert, put it on tight.
Do not open the crockpot lid during the first 2 hours of cooking time.
Let the banana bread cool slightly when it is done, then serve it sliced with or without butter.
