Sweet Apple and Chicken Recipe

This chicken apple recipe is better if you use tart apples and unsweetened apple juice but you can use sweet apples if you like the sweet flavor. Apple cider makes the dish more tart. This apple and chicken recipe is a complete meal because it contains chicken for protein, vegetables, potatoes, and juice. You can serve it by itself or with some fresh parsley on top, which would add color and a little more flavor as well.

It is simple to make, very nutritious and you can leave it cooking for seven hours, making it the perfect dinner for busy weeknights or if you are out working all day. The caraway seeds and thyme add a little bit of flavor to this chicken apple recipe but the chicken, vegetables and apples provide nearly all the flavor the dish needs and you will love the fresh taste.

Tasty Chicken Apple Recipe

Ingredients -

4 chicken breasts, cubed
½ teaspoon salt
½ teaspoon thyme
⅛ teaspoon caraway seeds
¼ teaspoon black pepper
4 carrots, peeled and diced
4 potatoes, diced
1 bay leaf
1 ¼ cups apple juice
1 tablespoon cider vinegar
2 tart apples, peeled and diced
1 rib celery, diced
1 onion, diced
2 tablespoons olive oil

Preparation:

Heat the olive oil in a skillet over a medium heat and add the chicken.

Brown it for 3 minutes per side.

Layer the potatoes, carrots, onion, and celery in that order in your crockpot.

Combine the thyme, salt, pepper, and caraway seeds and add half this mixture to the crockpot.

Add the chicken.

Sprinkle the diced apples over the top and add the rest of the seasoning mixture.

Add the bay leaf, cover, and cook for 7 hours on low or until the chicken is cooked through and the vegetables are tender.

Remove the bay leaf before serving.
