Ingredients -
8 chicken breasts, no skin, or bones
2 cups pizza sauce
1 cup shredded mozzarella
1 red bell pepper, sliced
1 onion, diced
¼ teaspoon salt
⅛ teaspoon black pepper
2 sliced green onions, for garnish
8 slices toasted bread
Preparation:
Season the chicken on both sides with the salt and pepper.
Put it in a crockpot. Add the bell pepper and onion, spreading them out over the chicken.
Pour the pizza sauce over the top, cover the crockpot, and cook for 4 ½ hours on low.
Turn the crockpot off and stir everything well.
Sprinkle the cheese over the toast, then spoon the chicken mixture over the top.
Sprinkle the green onions over the chicken pizza and serve it hot, with a salad on the side.
