This healthy whole chicken recipe is surprisingly simple to make and there is no need to brown anything beforehand. All you need to do is add the ingredients to the crockpot in the right order and let it cook. The carrots go in first because they take longer to soften than anything else. This is always the case when cooking food in a crockpot. The denser foods take longer than the less dense ones.
Although it is possible to cook a whole chicken in a crockpot without adding any other ingredients, this recipe features vegetables, spices, and bacon to give the chicken extra flavor, white beans, and a little white wine or water. The chicken releases its own liquid as it cooks but adding a little extra at the start means you will get sufficient steam to cook the vegetables. If you do not add liquid, the carrots might still be hard when the chicken is done. It is a good idea to use a pop-up timer in the bird because some crockpot cook faster or slower than others do. This recipe might only take four hours in some crockpots but eight hours in others, so if you already know your crockpot is quick you can start this cooking later.
A pop-up timer will tell you when the correct internal temperature has been reached, and therefore when the chicken is safe to eat. Without this you would have to cut into the chicken to find out whether it is done or use a regular thermometer, and either of these options means leaving the lid off the crockpot which would increase the cooking time substantially, so use a pop-up thermometer if you can. You might like to add a pinch of thyme and some garlic powder to the recipe. You can leave the bacon out if you want, but it does add a nice meaty flavor. If you do not want to use bacon, add a pinch of salt to the chicken instead. If you are using bacon, do not use salt because the bacon is salty enough.
Ingredients -
1 roasting chicken
1 chopped onion
1 teaspoon black pepper
1 teaspoon cayenne pepper
2 strips bacon
¼ cup white wine or water
2 teaspoons paprika
14 oz can white beans
1 chopped carrot
1 chopped zucchini
Preparation:
Clean the chicken and remove the giblets.
Save them for another use or discard them.
Add the white wine or water to a crockpot.
Add the carrots and chopped onion, then drain the liquid off the beans and pour them in.
Sit the chicken on top and lay the bacon strips over it.
Arrange the zucchini around the outside.
Sprinkle over the spices.
Cook on low for 6 to 8 hours.
