Curried Chicken and Sweet Potatoes

If you like meals with sweet potatoes and chicken, you will like this tasty crockpot recipe. Some recipes using chicken and sweet potatoes use curry to complement these flavors and this recipe also calls for garlic, ginger, bay leaves and more to enhance the wonderful chicken and sweet potato flavors and this one also does. The result is a lightly curried finish rather than anything too hot or spicy. You can use less curry powder if you only want a very subtle taste though.

You need to fry some of the ingredients in a skillet before cooking in the slow cooker but this is a relatively quick dish to make and only takes four hours on low in the crockpot. You can serve this chicken and sweet potatoes recipe with rice and some parsley to garnish if you like. If you enjoy making crockpot meals, this one is yet another example of how easy it is to make slow cooker meals with sweet potatoes and chicken.

Chicken thighs, which are used in this recipe, are meatier and more tasty than chicken breast. Their higher fat content makes them less likely to dry out, although that is not a problem when using a moist cooking method like slow cooking anyway. You could use chicken breast instead of chicken thighs if you prefer the flavor or want to use less fat in the recipe. This is one of our more healthy crockpot recipes, since there are plenty of vegetables and the chicken is a good source of protein.

Chicken and Sweet Potatoes Crockpot Recipe

Ingredients -

2 lbs boneless, skinless chicken thighs
1 teaspoon salt
4 cups chicken broth
2 peeled, chopped sweet potatoes
1 peeled, chopped potato
⅓ cup curry powder
1 tablespoon minced garlic
2 chopped onions
2 tablespoons flour
1 tablespoon ground ginger
5 tablespoons canola oil
2 bay leaves
¼ teaspoon black pepper

Preparation:

Add the flour to a Ziploc bag with half the salt and pepper and shake.

Add the chicken thighs and shake until they are coated in the flour mixture.

Add 3 tablespoons of the canola oil to a skillet and sauté the coated chicken over a moderate to high heat for 2 minutes per side or until it is browned all over.

Transfer the chicken to a crockpot, using a slotted spoon to scrape any bits of chicken fat off the pan.

Add the remaining oil and sauté the onion, garlic and ginger in the skillet until golden brown.

Add the curry powder and keep cooking, stirring constantly.

Transfer the contents of the pan into the crockpot, and then add the broth, bay leaves, potato, sweet potatoes, and the rest of the salt and pepper.

Cover and for 4 hours on low.
