Similar to Swiss steak, this recipe features beef, garlic, tomatoes, mustard, onion, bell pepper and more, and transforms the meat into a delicious stew-like dish. If you want bigger steak pieces, then chop the meat into just six pieces and fry them for several minutes per side. Smaller pieces brown faster.
The reason for sautéing the meat before adding it to the slow cooker is to brown it, sealing the pieces of meat, and caramelizing the juices on the outside. This keeps them juicy during the slow cooking and gives them a nice brown color but if you are in a hurry you can forgo this step without much of a consequence.
If you like to slow-cook budget cuts of beef, this recipe is a keeper because the meat comes out so juicy and soft, and the other ingredients are easy enough to find. If you want to spice this up a bit, you can add some hot sauce, else it is nicely flavored as it is and you might prefer the original recipe. Beef tip, round or tip is good in this, or you can try stewing beef or braising beef. If in doubt, ask your butcher which beef he recommends for slow-cooking in a sauce and see what he comes up with.
Ingredients -
1 ½ lbs chopped boneless beef tip, round or chuck
2 minced garlic cloves
14 ½ oz can diced tomatoes (not drained)
½ teaspoon ground mustard
1 sliced red onion
3 tablespoons all-purpose flour
1 sliced red bell pepper
2 tablespoons vegetable oil
½ teaspoon salt
6 portions rice or mashed potatoes, to serve
Fresh thyme leaves, for garnish (optional)
Preparation:
Combine the flour, salt, and mustard.
Coat the beef strips in this mixture.
Heat the oil in a 10 inch skillet over a moderate heat.
Sauté the beef for a few minutes, stirring, until browned all over.
Transfer the beef to a 4 or 5 quart crockpot and top with the bell pepper and onion.
Combine the garlic and tomatoes and pour this over the beef mixture in the crockpot.
Cover and cook for 8 hours on low, or until the meat is tender.
Serve with rice or mashed potatoes.
You can sprinkle some fresh thyme over the dish if you like.
