Ingredients -
2 lbs boneless pork loin, cubed
1 cup chopped onion
1 clove garlic, minced
1 cup Hokkaido pumpkin, cubed
½ red bell pepper, chopped
½ green bell pepper, chopped
2 cans tomatoes
¼ teaspoon crushed dried thyme
1 ½ teaspoons paprika
1 teaspoon salt
½ teaspoon black pepper
1 cup sour cream
Preparation:
Add everything to your slow cooker except the sour cream and stir well to combine.
Cover and cook on low for 8 to 10 hours or high for 4 to 5 hours, stirring a few times.
Add the sour cream 30 minutes before serving and mix it in well.
