Ingredients -
1 fresh pumpkin
2 tablespoons dark brown sugar
5 medium peeled potatoes
2 beef bouillon cubes
3 diced onions
1 tablespoon mixed Italian herbs
2 garlic cloves
12 slices toasted baguette bread, to serve
Fresh parsley, for garnish
Preparation:
Peel and roughly chop the pumpkin, and then put it in the crockpot.
Chop the potatoes into cubes and dice the onions.
Add these to the crockpot.
Add everything else.
For a thinner soup, you can add extra water, but remember crockpots do not let moisture evaporate so do not add too much liquid.
Cook for 8 hours on low or until the potatoes and pumpkin are tender.
Blend with a blender or hand mixer until very smooth.
Garnish the soup with fresh parsley sprigs and serve with toasted baguette bread.
Stir and serve.
