Ingredients -
4 chicken breasts, no bones or skin, cubed
½ cup chicken broth
1 red bell pepper, diced
8 oz can pineapple chunks in juice
1 tablespoon cornstarch
½ green bell pepper, diced
½ yellow bell pepper, diced
½ teaspoon ground allspice
½ teaspoon hot pepper sauce
2 tablespoons soy sauce
1 tablespoon brown sugar
White rice, to serve
Preparation:
Layer the chicken in the crockpot.
Combine the sugar, broth, allspice, pepper, and soy sauce in a mixing bowl and pour this into the crockpot.
Cover and cook for 5 hours on low or until the chicken is cooked.
When you are ready to serve this sweet crockpot chicken stew recipe, put the cornstarch in a mixing bowl, adding the juice from the pineapple.
Blend until smooth, and then pour this over the chicken.
Add the bell peppers and pineapple.
Cover and turn the heat up to high.
Cook for half an hour or until the mixture is bubbly and thick.
