Crockpot Korean Style Short Ribs With Rice

Ingredients -

5 lbs beef short ribs
2 tablespoons rice vinegar
2 tablespoons sesame oil
½ cup soy sauce
3 thinly sliced green onions
4 crushed cloves garlic
2 tablespoons minced ginger
1 tablespoon sesame seeds
1 ½ cups shredded carrots
⅓ cup light brown sugar
3 tablespoons cornstarch dissolved in 3 tablespoons hot water
½ teaspoon red pepper flakes
Shredded lettuce, to serve

Preparation:

Combine the sugar, oil, soy sauce, vinegar, garlic, red pepper, and ginger to make the sauce.

Put the ribs in the crockpot and pour the sauce over the top.

Cover and cook on low for 9 hours or high for 6 hours, until the ribs are tender.

Arrange the ribs on a platter. Skim the fat off the top of the cooking liquid.

Bring the cornstarch paste to a boil in a pan with the cooking liquid and cook it for 2 minutes or until thick.

Stir in the carrots and serve the ribs on a bed of lettuce, with the sauce, scallions, carrots, and sesame seeds on top of them.
