Ingredients -
5 lbs potatoes, peeled and cubed
2 cubes chicken bouillon
1 tablespoon minced garlic
½ cup butter, softened
8 oz cream cheese, softened
8 oz sour cream
Salt and pepper
Handful chopped parsley to garnish
For the Caramelized Onions:
1 ½ tablespoons butter
1 tablespoon olive oil
1 teaspoon sugar
1 ¼ lbs onions, thinly sliced
Salt and pepper
Preparation:
Bring a large pan of water to the boil.
Add some salt.
Add the potatoes, chicken bouillon cubes and garlic and cook the potatoes until them are firm but tender.
This takes about 15 minutes.
Drain the potatoes, keeping some of the cooking water.
Mash them with cream cheese and sour cream, adding some of the cooking water until they have the right consistency.
Transfer the mashed potatoes to a 4 quart crockpot, cover and cook for 2 or 3 hours on low.
To make the caramelized onions, melt the butter in the olive oil over a medium high heat in a skillet.
Add the onions, some salt and pepper and cook, stirring constantly, for about 5 minutes.
Stir in the sugar and cook, scraping the burnt bits off the bottom of the pan.
The onions will be golden brown after 20 minutes.
Stir the butter into the mashed potato and season it with salt and pepper.
Serve with the caramelized onions and chopped parsley over the top.
