Chicken and Dumplings in a Wine Sauce

Ingredients -

3 lbs chicken pieces
4 tablespoons butter
1 onion, chopped
1 tablespoon canola oil
2 tablespoons flour
½ cup heavy cream
1 can of refrigerator biscuits
1 cup dry white wine
1 teaspoon salt
1 teaspoon black pepper
½ teaspoon allspice
6 whole baby carrots
6 peeled, chopped potatoes
2 tablespoons finely chopped fresh parsley
2 cups chicken broth
2 stalks celery, chopped

Preparation:

Put the butter in a skillet and heat over a medium heat until it melts.

Add the oil.

Add the onion and cook for a couple of minutes until it softens slightly.

Add the chicken and cook until lightly browned all over.

Put the chicken and onions in the slow cooker.

Add the chicken broth, potatoes, carrots, celery, salt, pepper, half the parsley, wine, and allspice.

Cover and cook on high for 2 ½ hours.

Remove the chicken from the crockpot and set it aside.

Mix the flour with the heavy cream in a mixing bowl until the flour has dissolved.

Add this mixture to the crockpot.

Cut each biscuit into 4 pieces and add these to the crockpot.

Cover and cook until firm. This will take about half an hour.

Return the chicken to the crockpot and let it cook for 10 minutes on high.

Serve garnished with the remaining parsley.
