Ingredients -
1 onion, thinly sliced
1 cup thick BBQ Sauce
9 oz canned green chilies, diced
1 teaspoon dried oregano
1 teaspoon ground cumin
¼ teaspoon ground cinnamon
½ cup chopped cilantro
3 lb boneless pork shoulder roast, trimmed
Preparation:
Combine everything except the pork and cilantro to make the sauce.
Put the pork in the crockpot and pour the sauce over it, lifting the pork a bit so the sauce will go underneath.
Cover and cook on a low heat until the pork is very tender.
This will take 8 to 10 hours.
Pull the pork apart or shred it with forks.
