Ingredients -
6 chicken breasts, no bones or skin, in cubes and frozen
10 oz frozen broccoli florets
½ red bell pepper, in strips
¼ teaspoon minced garlic
1 onion, chopped
3 tablespoons olive oil
½ lb fresh mushrooms, sliced
¼ cup chicken broth
8 oz cream cheese, softened
11 oz can cream of celery soup
1 oz package dry Italian dressing mix
¼ cup chicken broth
Preparation:
Completely cover the cubed chicken with the olive oil in a bowl.
Put the Italian dressing mix in Ziploc bag and add the chicken.
Shake well to coat. Put the chicken in the slow cooker, cover and cook for 3 ½ hours on low.
Spray a skillet with non stick cooking spray and heat it over a medium high heat.
Add the mushrooms, bell pepper, and onion.
Add the cream cheese, chicken broth, and soup.
Add ¼ cup of the juice from the crockpot.
Add the garlic. Stir well until you have a smooth mixture.
Add salt and pepper to taste.
Pour this mixture over the chicken, cover and cook for an hour.
