Ingredients -
2 large chicken breasts
4 oz taco style cheese
1 onion, chopped
1 can sliced black olives
11 oz cream of chicken soup
˝ can corn kernels, drained
˝ can black beans, drained
1 tablespoon canola oil
6 corn tortillas
12 oz enchilada sauce
Preparation:
Add the oil to a skillet over a medium heat, and then add the chicken.
Sauté the breasts for 5 minutes on each side.
Remove the chicken and let it cool down, then shred it.
Mix together the olives, beans, corn, onions, and soup.
Layer half the enchilada sauce, then the tortillas, then the soup, chicken, the cheese and the rest of the sauce in the crockpot.
Cover and cook on low for 7 hours. Serve with a green salad.
