Recipe for Ratatouille in Crockpot

Ratatouille is a traditional Provencal stewed vegetable dish from the Nice region in the south of France. Ratatouille nicoise is the full name of the dish and it cooks very well in the crockpot. Traditional Ratatouille Provencal

Ingredients -

1 eggplant, sliced and cut into 2 inch pieces
2 onions, cut in half and sliced
2 tomatoes, in ½ inch wedges
2 green bell peppers, seeded and cut into thin strips
2 garlic cloves, minced
4 zucchini, sliced
¼ cup olive oil
2 teaspoons salt
½ teaspoon black pepper
1 teaspoon sugar
6 oz tomato paste
1 teaspoon dried basil
½ teaspoon red pepper flakes
2 tablespoons fresh parsley, chopped
½ teaspoon oregano

Preparation:

Layer half the vegetables in the crockpot - first the onion, then the eggplant, zucchini, garlic, green bell pepper and finally the tomatoes.

Sprinkle in half the oregano, basil, sugar, salt, pepper, and parsley.

Dot with half of the tomato paste.

Repeat the layer process with the rest of the vegetables, tomato paste, and spices.

Drizzle with olive oil, cover and cook for 7 to 9 hours on low.

Pour into a serving bowl and sprinkle with freshly grated parmesan to serve.
