Fans of fish will love this crockpot salmon recipe and it is a healthy one too. The salmon is flavored with white wine and orange juice and the red onion, fennel and capers add crunch and flavor. This is a very simple recipe and it does not require many ingredients. You will need to cook some pasta to serve it with and it is easiest to do that in a pot on the stove while the salmon finishes slow cooking. This is quite a hearty meal.
Sometimes nutritious meals can be more filling than meals which are not quite so healthy. Take whole wheat pasta and brown rice, for example. They are far more filling that their white counterparts, because they take longer to digest and therefore keep you feeling satisfied for longer. Remember that brown rice takes about twice as long to cook as white rice and whole wheat pasta can take slightly longer too, so check what is says on the package. You can serve this crockpot salmon recipe with brown rice rather than pasta if you prefer but cook it in a pan because the salmon only takes about half an hour or forty minutes to cook in the slow cooker and that is not long enough for the rice.
Ingredients -
2 lbs salmon fillets, no bones or skin
4 cups orange juice
1 sliced red onion
1 sliced fennel bulb
3 cups Chardonnay (or medium dry white wine)
2 teaspoons capers
1 teaspoon salt
Black pepper
1 package pasta
Preparation:
Fold a 36 inch strip of foil in half lengthwise so it is a little longer than the salmon.
Put it in a 4 to 6 quart crockpot and let the foil hang over the outside.
Mix the fennel, onion, orange juice, wine, salt, pepper and capers together and pour the mixture into the crockpot.
Put the fish on top.
Cover the crockpot and cook for about 40 minutes on high.
Cook the pasta as per the instructions on the package.
When the salmon flakes easily with a fork, it is done.
Test it after half an hour of cooking, then every 5 minutes.
Remove the cooked fish from the slow cooker and arrange it on a serving plate with the pasta.
Spoon the fennel mixture over the top and serve immediately.
